Steaks
Ribeye, NY strip, sirloin, tenderloin, T-bone/porterhouse, flank, skirt. You pick the thickness (typically 3/4"–1.25").
Roasts
Chuck, rump, sirloin tip, brisket. You set the size (2–5 lb is typical). Round roasts or steaks — your call.
Ground beef
Whatever doesn't go to steak or roast gets ground. 80/20 by default — leaner or fattier on request. 1-lb packages standard.
Short ribs & stew
Short ribs, stew meat, shank. Perfect for winter braises.
Soup bones
Marrow bones and knuckle bones. Optional but free if you want them — just note on the cut sheet.
Organ meats & tallow
Liver, heart, tongue, kidneys, oxtail, suet for tallow rendering. All optional — you say what you want.
