A balanced mix from one whole animal.
An eighth gives you a representative slice of a whole animal: a few steaks (typically ribeye and sirloin), a roast or two, a generous helping of ground beef (usually 25–30 lbs), some stew meat, and short ribs if there's enough to go around.
